Shannon Boerner, M.D., assistant professor of internal medicine, discusses a tip related to today’s theme of sustainabile food practices.
Why are you involved with UNMC LiveGreen?
I had been thinking about finding or starting a group focused on energy conservation here on campus, so I was delighted when I heard about UNMC LiveGreen and volunteered right away. Much of my work focuses on education, both of patients as well as students and residents, and I feel that one important way we educate others is by our own example. I try to live and work in a way that respects and values the resources we have, and being a part of UNMC LiveGreen helps me share this with the UNMC campus.

What are some of your personal tips on how to identify and eat healthy & sustainable food?
We buy local whenever possible, for instance, from individuals at a farmers’ market, and we drink milk bottled at a local dairy farm. We also make an effort to eat food that is minimally processed — this is healthier and reduces waste in packaging. Our family has moved toward eating less meat as it is more environmentally costly. I also try to avoid foods with chemical or unpronounceable ingredients, and stick to whole foods.
