For the executive chef of The Restaurant, located in the lobby of the Fred & Pamela Buffett Cancer Center, his mission is to provide his guests with a memorable experience.
Tim Jones, a native of New York City, who has lived all over the country, was excited for the opportunity to lend his creativity and passion to a project that could positively impact the people who work here, our patients and their families.

“I want to not only feed your body, but feed your soul,” Jones said. “When people come here, whether they’re the patient or the family, I want to make sure they experience something that’s not run-of-the-mill hospital food. I want it to be nutritious, so they can feel good about what they had that day. And to make sure the food is fresh, wholesome and tastes great.”
Jones said when developing the menu, he researched foods considered “cancer-fighting foods” – like whole grains, green leafy vegetables, fresh berries, whole nuts, limited dairy and meat that’s not cured, fried or smoked.
“I created a menu that pulls all of these things together.”
He also tries to keeps each dish from 500 to 550 calories and creates menus based on what produce is in season, using local vendors.
For Jones, cooking has been a passion since he was a young boy.
“I’ve been cooking my entire life,” he said. “Find something you love to do and make a career out of it. That’s what I did.”
He’s worked as an executive chef at casinos in Kansas City and the metro area. He’s lived in Omaha for four years now and was thrilled to no longer commute.
“This is a great opportunity as a chef, to have a normal, stable working schedule but to also satisfy my soul with this creative culinary adventure,” Jones said. “As a chef, it’s always great to open something new and put your stamp on it.”
For Jones, he feels grateful for the opportunity to be here.
“I get to be a creative chef, delivering great food to the people who work here, and I work with some of the nicest people in the area.”

If there are no prices on the menu, that means it costs a lot of money. You expect cancer patient families to be able to eat there??? How about some affordable food?

I have never loved what I ate in a hospital before today. I am so pleased to finally have a healthy, creative and affordable option on campus for those days I can't bring my own lunch to work. I ordered the Crispy Chicken and instead of the dry piece of stringy leather one would expect from any other hospital cafeteria (or outside casual restaurant for that matter), I was served a beautifully presented, tender and juicy chicken breast over grits. I tend to base my judgment of an eating establishment on the chicken. That might not be entirely fair all the time, but if the chicken is good, you know everything is good! In this case, the chicken was really good. I look forward to trying everything on Mr. Jones' menu!
(Don't even get me started on the pistachio ice cream!)
The crabcakes, in truth a nice portion of lump crab rather than the traditional deep-fried cake , were delicious! I will be back.

Just went to the Survivors Week cooking demo. It was entertaining, and very informative. The Salmon dish Chef Jones prepared for us was quick, easy, nutritious, and best of all delicious! Thanks to all involved in this presentation!
