Sushi, French-style casual food and stir fry. By the end of next summer, you’ll be able to get those items and more after a major renovation project at the Clarkson Cafe and Nebraska Cafe.

Subway in Clarkson Cafe
Subway is probably the most recognizable vendor added to Clarkson Cafe, but Oh! Oh! Burrito and QuickFire Grille also will be available.
In addition, there will continue to be salad bar, entree and pizza stations.
The construction of the Subway counter will begin first. After that has been completed and Subway is open, demolition will begin in the rest of the cafeteria and dining area.
Seating crunch expected during renovation
During the renovation, seating could be in short supply. Staff may be asked to use the dining areas in Storz Pavilion and Nebraska Cafe during the construction.
The anchor in the Nebraska Cafe will be Brioche Doree, which serves French-style casual food. Other new vendors include Mein Bowl and AFC sushi. There will continue to be a salad bar and entree station following the renovation.
Like Subway in the Clarkson Cafe, Brioche Doree will be completed first in Nebraska Cafe before renovation begins in the rest of the cafeteria.
Customer input led to vendor selection
Customer satisfaction was the top priority when deciding upon outside vendors.
“We reviewed the customer preference surveys before deciding on vendors,” Hoffman said. “It is all about staff preference.”
Reasonable prices
Outside vendor pricing will be commensurate with prices at their other retail locations. Prices on existing food station items will remain as they are today.
Some additional seating will be added to both cafeterias and new lighting and overhead music will be included when the renovation is complete.
Coffee cart to be upgraded, too
As a part of the renovation project, the coffee cart area in the east atrium of the Durham Outpatient Center also will receive a face lift.
The coffee cart will be a permanent station rather than the current temporary cart and the menu will include soups and other “Simply to Go” items.
The bench seating will be replaced with new “soft” seating and will resemble an Internet cafe atmosphere.
OH NO! Not overhead music. The cafeteria is one of the few places you can sit and talk without having to listen to and/or raise your voice over objectional moaning music. No type of music suits all, and it is generally too loud for my ears. Please, not overhead music.
I second the vote on no additional music/noise/tv's, etc.
Good idea , bring in other Nebraska based vendors, in example , Runza and Valentions.
Music?? That has really been missing for a long time. Light jazz, soft rock, even elevator music……
Woo Hoo for Sushi! It is really about time that we start providing alternative food options. I am tired of looking at the nutritional facts of products like soup and sandwiches and seeing the high sodium content. Im glad to see we are finally renovating our food options.
this is exciting but I hope you continue to provide the nutritional breakdown of the foods available. I love that I can see how many calories, how much sodium and how much faton everything I eat at the cafe.
Sounds great, but WHAT is French style casual food??? I agree with not having music!!
I work for the urology clinic and wanted to suggest you guy get fresh buns. the bread on our sandwiches was too dry. otherwise it was great thanks
