Earth Week tips – Sustainable food practices with Dr. Boerner

Throughout Earth Week Week 2011, the UNMC LiveGreen team will present tips from employees on how they conserve energy and resources at home and work.

Why are you involved with UNMC LiveGreen?

I had been thinking about finding or starting a group focused on energy conservation here on campus, so I was delighted when I heard about UNMC LiveGreen and volunteered right away. Much of my work focuses on education, both of patients as well as students and residents, and I feel that one important way we educate others is by our own example. I try to live and work in a way that respects and values the resources we have, and being a part of UNMC LiveGreen helps me share this with the UNMC campus.












Sustainable Sodexo/Thursday e-waste



Stop by displays outside the Nebraska Cafe and Clarkson Cafe today during the lunch hours to learn more about Sodexo’s efforts to improve its food sustainability efforts.

Also, remember to bring your old household electronics to campus Thursday for a collection event at General Supply (41st Street between Emile and Leavenworth) between 7 and 9 a.m. or 3 and 5 p.m. The collected items will be safely recycled or remanufactured.





What are some of your personal tips on how to identify and eat healthy & sustainable food?

We buy local whenever possible, for instance, from individuals at a farmers’ market, and we drink milk bottled at a local dairy farm. We also make an effort to eat food that is minimally processed — this is healthier and reduces waste in packaging. Our family has moved toward eating less meat as it is more environmentally costly. I also try to avoid foods with chemical or unpronounceable ingredients, and stick to whole foods.
