Rachel Lietka serves as an Assistant Professor of Medical Nutrition in the College of Allied Health on the Kearney Campus. She completed her undergraduate degree at Kansas State University, followed by a master’s degree and dietetic internship at the University of Nebraska Medical Center.

Rachel began her career as a Nutrition Therapist at Nebraska Medicine, where she worked as a full-time float dietitian. Most recently, she held the position of Clinical Dietitian at Kearney Regional Medical Center. In her new role, she will teach master’s level courses for the Master of Medical Nutrition program and the new undergraduate MNT courses.
